Those delicious cookies will be your best friends during PMS.

They will:

  • Satisfy your chocolate and/or sweet cravings
  • Are packed with protein, fibers, iron and magnesium
  • Give you a guilt-free alternative to indulge in

Disclaimer: those cookies are made with chickpea flour.

Making chickpea flour at home is really easy. Basically you just need to grind chickpeas in a blender for a few minutes, then sift the ground chickpeas until flour-like.

The web is full of tutorials on how to make chickpea flour so i’ll let it to you. You can also buy it to avoid the hassle.

To make oats flour, just grind regular oats in a blender.

I purposely didn’t put a lot of sugar because it’s bad for PMS, so up the sugar if you really need.

Yield: 35 cookies

  • 2 cups chickpea flour
  • 1/2 cup oats flour
  • 1 cup cocoa
  • 1/4 cup sugar
  • 2 eggs
  • 1/2 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 cup milk
  • 2 pinches of salt
  • 100g (3.5 oz) dark chocolate above 70%

Preheat your oven to 180°C (350°F).

Cut the dark chocolate into tiny cubes the size of chocolate chips.

Mix all the dry ingredients. Then add all the liquid ingredients. Mix until you get a semi solid semi liquid dough.

Check the sugar and salt levels by lightly tasting the dough. Don’t worry if the chickpea tastes terrible, the taste will fade after baking.

Scoop the dough into cookies of your preferred size and lay them on a cookie sheet.

Bake for 10 minutes.

Enjoy !
